My good friend Leighton from Little Rock Arkansas sent us this carrot pomegranate juice recipe, and it is one of my all time favorite juice mixtures. To get started, first you will want to wash and rinse your produce under cool running tap water. If you buy prepeeled baby carrots, then this will save you a lot of time. Next take out a sharp serrated kitchen knife, and remove the skin from the pomegranate, until just the small juicy beads are left. You should have a large handful of these red little pomegranate seeds. Moving right along, next place a tall highball glass under your juice spout, then turn on your machine. You are now ready to start feeding your produce through the machine. Once your glass is full of the orange red colored liquid, rapidly stir in one tablespoon of fresh squeezed lemon juice.
