Carrot Pudding

Ingredients:
4 lbs. of diced boiled carrots
3 cups of milk
1 1/2 cups of cream
1 cup of sugar
1 cup of butter or margarine
3 teaspoons of baking soda
3 teaspoons of cinnamon
1 teaspoon of ground nutmeg
1 teaspoon of salt

Preparation Directions:
This recipe will create about 15 servings of carrot pudding, feel free to down size the portions if needed.  You will first want to add the carrots, cream, butter, sugar, and milk into a saucepan.  Mix the ingredient thoroughly.  Bring the added ingredients to a boil, while constantly stirring.  Then begin to reduce the heat, while continuing to stir, aiming for the desired pudding consistency and thickness, this may take up to 45 minutes.  Once the desired thickness is achieved, you will then want to place the saucepan on low heat, and add in the remaining ingredients one by one, while continuing to stir them in thoroughly.  Cook on low heat for about 15 to 20 minutes, and the recipe is complete.  It can be served either as warm or cold pudding.
