Delicious Carrot Muffins
Ingredients:
2 Cups of Whole Wheat Flour
1 Cup of Virgin Olive Oil
2 Teaspoons of Salt
2 Teaspoons of Cinnamon
1 Teaspoon of Nutmeg
2 Teaspoons of Baking Soda
2 Teaspoons of Vanilla
2 Cups of Brown Sugar
2 Cups of Grated Uncooked Carrots
4 Medium to Large Eggs
1 Cup of Crushed Pecans or Walnuts
1/4 Cup of Thinly Sliced Almonds
Preparation Directions:
Preheat your oven to 350 degrees Fahrenheit. Grease approximately 12 muffin cups thoroughly. Mix the whole wheat flour, virgin olive oil, salt, baking soda, eggs, and brown sugar first. After the first group of ingredients are thoroughly mixed, add in the remaining ingredients and mix again thoroughly. You will then want to cook the muffins for about 20 minutes, be sure and keep an eye on them, as you do not want the muffins over cooked. Let cool for about 10 minutes and serve.
