Carrot Cookies
Ingredients
1 cup of grated uncooked carrots
2 cups of oats
2 cups of white flower
2 raw eggs
1/2 cup of margarine or butter
2/3 cup of white sugar
3/4 cup of brown sugar
2 teaspoons of baking powder
1 teaspoon of baking soda
1 teaspoon of salt
1 teaspoon of cinnamon
1 teaspoon of nutmeg
1 cup of crushed peanuts
1 teaspoon of vanilla extract
Preparation Directions:
Thoroughly beat the eggs together in a mixing bowl. Next add the sugar and butter, again mix thoroughly. In a separate mixing bowl, mix together the oats, white flower, baking soda, baking powder, nutmeg, vanilla extract, salt, and cinnamon. Once thoroughly mixed, add the ingredients to the first mixing bowl, and stir until nicely blended. Now you will want to add in the chopped peanuts. You may also substitute the peanuts with a different type of nut, or add a variety of nuts into the mix. Almonds, walnuts, and filberts all compliment the recipe quite well. You will then want to grease a cooking sheet. Begin taking spoonfuls of the mixed batter and placing it on to the cooking sheet. Be sure and flatten the cookie dough with a spoon of fork. Before placing the cooking sheet into the oven, preheat it to 350°F for 10 minutes. Once the oven is ready, place the cooking sheet with the dough into the oven, and bake it for 25 or 30 minutes.
