Gourmet Carrot Cake

Cake Ingredients:
2 Cups of Whole Wheat Flour
1 Cup of Brown Sugar
4 Medium to Large Eggs
1 Cup of Virgin Olive Oil
1 Teaspoon of Salt
1 Teaspoon of Baking Soda
2 Teaspoons of Cinnamon
1 Teaspoon of Ginger
2 Cups of Uncooked Grated Carrots
1 Cup of Crushed Pecans or Walnuts

Frosting Ingredients:
5 ounces of Philadelphia Cream Cheese
1/2 Cup of Butter
2 Cups of Powdered Sugar
2 Teaspoons of Vanilla

Preparation Directions:
Preheat your oven to 350 degrees Fahrenheit. Grease the baking pan thoroughly. Mix the eggs, flour, brown sugar, baking soda, salt, and olive oil first in a large mixing bowl. Then mix in the remaining ingredients. Make sure the cake batter is mixed well, then pour it into your cooking pan.  And finally, you want to cook the cake for about 40 minutes. Do keep an eye on it to make sure it doesn't over cook, as you want the cake nice an moist. After the cake has cooled, the last step is you will need to mix the frosting ingredients together with an electric mixer on medium speed. Frost the cake and you are all done.
