Canned Carrots:
Canning carrots is fun and easy, it's also an excellent way to store all of those seasonal surplus carrots you have stored up.

Canning Instructions:
The first step is you want to wash your carrots thoroughly. You may even want to use a light scrubber just to make sure all of the dirt is removed from any cracks or crevices. After the carrots are washed, you will need to peel them all with a potato peeler, and then wash them once more after the peeling is completed. Now your carrots are ready to be cut and portioned. Please feel free to cut them as desired, diced, sliced, or cut into strips is fine. Moving along, you will now need to portion out the cut carrots into canning jars, jars of any size will do. Generally you will want to use about a half a teaspoon of canning salt per pint of water.  Boiled the canning salt with mineral water, make sure the salt is completely dissolved. Now, you will want to add the boiling mineral water with canning salt to each jar of carrots. Be sure and leave about a 1 inch head space in each jar, you do not want to fill them to high.  You will now want to sill the lids tightly, and you are all finished.  Canned carrot will retain all of the nutrients of fresh carrots, perfect as a side dish or snack for the whole family.
